In this case , spiral up or down is referring to an un controlled behavior. The section where spiral is used (in the article) is:

"and sent the company’s stock price spiraling. In June, Coinbase laid off 18 percent of its staff."​

Here it refers to a downward "uncontrolled" fall of price
 
There may also be connotations of a reinforcing feedback loop, i.e., the price falls, which causes owners to sell out of fear or legal necessity (if they are managing certain classes of assets for others there are often regulations), which causes the price to fall even more, and so forth.
